Zapiekanka
A polish streetfood
Ingredients
- 1 pc Baguette
- 500 g Mushrooms (Either all champingions or a 50:50 mix with Porcini)
- 2 pc Onion (red)
- 250 g Appenzeller (other well meltable cheeses also useable)
- 20 g Chieves (chopped)
- 10 g Fried onions
- 1 bunch Thyme
- 20 g Butter
Instructions
Cut onions in half-rings. Put on medium heat for 2-3 minutes, until soft. Then add a half-teaspoon of salt, and keep caramelizing for 50-80 minutes.
While the onions are caramelizing, clean and slice the mushrooms. In a skillet with butter, fry the mushrooms on low-medium heat for around 5 minutes. Pull the leaves of the thyme and add to the mushrooms with a bit of salt. Keep frying on low heat for another 2 minutes.
Once all ingredients are ready, preheat the oven to 150C on fan-mode. Slice the cheese in thin slices. Cut the baguette in 3 pieces and half them. Place mushrooms on the bread, add the caramelized onions on top. Layer the cheese on top. Put in the oven for 5 to 10 minutes, depending on type of cheese, until cheese well melted.
When out of the oven, immediately add the fried onions and chives ontop and serve.
