Warm Potato & Smoked Salmon Salad
Hearty, high-protein, and very satisfying for a winter night. A comforting salad that showcases the classic combination of potatoes and smoked salmon.

- 200g Smoked Salmon
- 400g Baby Potatoes (or any firm boiling potato)
- 1/2 Red Onion (thinly sliced)
- 1 tbsp Capers (optional)
- 2 handfuls Mixed Greens
- 3 tbsp Greek yogurt (or Sour Cream)
- 1 tsp Dijon mustard
- Juice of 1/2 Lemon
- Fresh Dill or Parsley (lots)
Instructions
**Boil Potatoes:** Halve the baby potatoes and boil in salted water until tender (about 10–12 mins). Drain.
**Make Dressing:** While potatoes boil, mix the yogurt, mustard, lemon juice, and chopped herbs in a large bowl.
**Toss:** Add the warm potatoes and sliced red onions to the dressing bowl. The warmth of the potatoes will help the dressing soak in.
**Assemble:** Place the mixed greens on plates. Top with the warm potato mixture and tear the smoked salmon into bite-sized ribbons over the top.
**Finish:** Top with capers if you like a salty kick.
