Warm Potato & Smoked Salmon Salad

Hearty, high-protein, and very satisfying for a winter night. A comforting salad that showcases the classic combination of potatoes and smoked salmon.

  • 200g Smoked Salmon
  • 400g Baby Potatoes (or any firm boiling potato)
  • 1/2 Red Onion (thinly sliced)
  • 1 tbsp Capers (optional)
  • 2 handfuls Mixed Greens
  • 3 tbsp Greek yogurt (or Sour Cream)
  • 1 tsp Dijon mustard
  • Juice of 1/2 Lemon
  • Fresh Dill or Parsley (lots)

Instructions

  1. **Boil Potatoes:** Halve the baby potatoes and boil in salted water until tender (about 10–12 mins). Drain.

  2. **Make Dressing:** While potatoes boil, mix the yogurt, mustard, lemon juice, and chopped herbs in a large bowl.

  3. **Toss:** Add the warm potatoes and sliced red onions to the dressing bowl. The warmth of the potatoes will help the dressing soak in.

  4. **Assemble:** Place the mixed greens on plates. Top with the warm potato mixture and tear the smoked salmon into bite-sized ribbons over the top.

  5. **Finish:** Top with capers if you like a salty kick.
