Warm Lentil & Beet Salad with Feta
Vegetarian, high iron/fiber. Uses pre-cooked ingredients for speed. A nutritious and colorful salad that comes together in under 15 minutes.

- 1 pack (approx 250g) Pre-cooked Lentils (canned or vacuum sealed)
- 250g Pre-cooked Beets (vacuum sealed), cubed
- 100g Feta cheese, crumbled
- 50g Walnuts, roughly chopped
- 2 handfuls Arugula (Rocket)
- Olive oil
- Lemon juice
- 1 tsp Dijon mustard
Instructions
**Warm:** Heat a pan with a drizzle of oil. Add the lentils and walnuts. Sauté for 3-4 mins until lentils are warm and walnuts smell toasted. Season with salt/pepper.
**Combine:** In a bowl, toss the arugula with the dressing.
**Assemble:** Top the greens with the warm lentil/walnut mix and the cold cubed beets.
**Top:** Scatter generous amounts of feta on top.
