Warm Lentil & Beet Salad with Feta

Vegetarian, high iron/fiber. Uses pre-cooked ingredients for speed. A nutritious and colorful salad that comes together in under 15 minutes.

Ingredients

  • 1 pack (approx 250g) Pre-cooked Lentils (canned or vacuum sealed)
  • 250 g Pre-cooked Beets (vacuum sealed) (cubed)
  • 100 g Feta cheese, crumbled
  • 50 g Walnuts (roughly chopped)
  • 2 handfuls Arugula (Rocket)
  • Olive oil
  • Lemon juice
  • 1 tsp Dijon mustard

Instructions

  1. **Warm:** Heat a pan with a drizzle of oil. Add the lentils and walnuts. Sauté for 3-4 mins until lentils are warm and walnuts smell toasted. Season with salt/pepper.

  2. **Combine:** In a bowl, toss the arugula with the dressing made from lemon juice, olive oil and mustard.

  3. **Assemble:** Top the greens with the warm lentil/walnut mix and the cold cubed beets.

  4. **Top:** Scatter generous amounts of feta on top.
