Warm Chickpea & Avocado "Hummus Bowl"
Warm, filling, and high in healthy fats. A quick weeknight dinner that combines the flavors of hummus with fresh avocado.

- 1 can chickpeas
- 1 tsp smoked paprika
- ½ tsp cumin
- 2 ripe avocados
- ½ red onion (finely diced)
- Handful of fresh cilantro
- Juice of 1 lime
- 2 handfuls fresh spinach
- Olive oil
- Salt and pepper
Instructions
**Warm Chickpeas:** Drain and rinse chickpeas. Toss them into a pan with a splash of olive oil, the smoked paprika, and cumin. Sauté over medium heat for about 5–8 minutes until they are warm and slightly crisp.
**Mash Avocado:** While chickpeas warm, mash the avocados in a bowl with the lime juice, diced red onion, and chopped cilantro. Season with salt and pepper.
**Assemble:** Place a base of fresh spinach in two bowls.
**Combine:** Top the spinach with the warm spiced chickpeas and a large scoop of the avocado mash. Drizzle with a little extra olive oil if desired.
