Warm Chickpea & Avocado "Hummus Bowl"

Warm, filling, and high in healthy fats. A quick weeknight dinner that combines the flavors of hummus with fresh avocado.

Ingredients

  • 1 can chickpeas
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • 2 ripe avocados
  • ½ red onion (finely diced)
  • Handful of fresh cilantro
  • Juice of 1 lime
  • 2 handfuls fresh spinach
  • Olive oil
  • Salt and pepper

Instructions

  1. **Warm Chickpeas:** Drain and rinse chickpeas. Toss them into a pan with a splash of olive oil, the smoked paprika, and cumin. Sauté over medium heat for about 5–8 minutes until they are warm and slightly crisp.

  2. **Mash Avocado:** While chickpeas warm, mash the avocados in a bowl with the lime juice, diced red onion, and chopped cilantro. Season with salt and pepper.

  3. **Assemble:** Place a base of fresh spinach in two bowls.

  4. **Combine:** Top the spinach with the warm spiced chickpeas and a large scoop of the avocado mash. Drizzle with a little extra olive oil if desired.
