Tuna & Cannellini "Pantry Power" Bowl

No-cook, very high protein pantry meal. A Mediterranean-inspired bowl that comes together in minutes using shelf-stable ingredients.

Ingredients

  • 2 cans High-quality Tuna (in olive oil is best)
  • 1 can (400g) Cannellini beans (or white kidney beans), rinsed
  • 1/2 Red onion, very finely diced
  • 1 Cucumber, diced
  • 1 large bunch Fresh Parsley, chopped
  • Juice of 1 Lemon
  • 3 tbsp Olive oil
  • Salt and Pepper
  • Chili flakes (optional)

Instructions

  1. **Mix:** In a large bowl, combine the drained beans, onion, cucumber, parsley, and dressing. Toss well.

  2. **Add Tuna:** Flake the tuna into the bowl. Be careful not to mash it too much; keep big chunks.

  3. **Serve:** Eat as is, or serve over a bed of mixed greens.
