Sun-Dried Tomato Salad with Olives and Feta
This is a delicious and refreshing, Greek-style salad featuring aromatic sun-dried tomatoes, olives, salty feta cheese, and crunchy seeds with Mediterranean flavors. The recipe pairs well with Mediterranean dishes and can be prepared ahead by storing ingredients separately until serving.

- 2 handfuls arugula salad blend (or favorite lettuce)
- 10 kalamata or black olives
- 8 sun-dried tomatoes
- 60g feta cheese
- 2 tbsp pumpkin seeds
- 2 tbsp sunflower seeds
- 2 tbsp oil from sun-dried tomato jar
- 2 tbsp lemon juice
- 1 tsp honey
- 1 tsp dried oregano
- 1/2 tsp lemon zest
- Salt and black pepper to taste
Instructions
Wash and dry lettuce using a salad spinner.
Chop sun-dried tomatoes into thin strips and slice olives.
Toast seeds in a dry pan over medium heat until golden and fragrant, then transfer to a plate.
Combine all dressing ingredients in a jar and shake until well blended.
Assemble salad on a plate: layer lettuce, add tomatoes and olives, crumble feta on top, sprinkle seeds, and drizzle dressing.
