Simple Orzo
This simple side dish highlights orzo's appeal as a small, rice-shaped pasta that cooks incredibly fast. The recipe combines tender pasta with bright citrus and butter for a Mediterranean-inspired accompaniment. It pairs well with seafood, poultry, or vegetarian mains and can be customized with herbs, cheese, or vegetables for different variations.
Ingredients
- 180g orzo
- 1/2 tsp kosher salt
- 15g butter (or olive oil)
- 2 tbsp fresh lemon juice (1/2 lemon)
- Chopped fresh parsley or feta cheese crumbles, for garnish (optional)
Instructions
Fill a medium pot with 2L water and bring to a boil. Once boiling, add the orzo and stir.
Bring back to a boil, then boil for about 8 minutes until tender. Taste test a grain to check doneness. Drain into a strainer and return to the pot.
Stir in kosher salt, butter (or olive oil), and lemon juice. Taste and adjust lemon if desired. Add optional garnish. Serve immediately; store leftovers refrigerated for up to 5 days.
