Shrimp Caesar Salad

- 450 g medium shrimp, deveined
- ½ tsp kosher salt
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp cumin
- 2 tbsp olive oil
- 350 g romaine hearts (chopped)
- 1 recipe homemade croutons (or purchased)
- 50 g Parmesan cheese shavings
- 1 medium garlic clove (minced)
- 25 g Parmesan cheese (grated)
- 2 tbsp lemon juice
- 180 ml mayonnaise (or 60ml mayo + 120ml Greek yogurt + 1 tbsp olive oil)
- 1½ tsp Dijon mustard
- ½ tsp anchovy paste or Worcestershire sauce (optional)
- ¼ tsp kosher salt and black pepper
Instructions
Whisk Caesar dressing ingredients together and refrigerate in covered jar (stores up to 1 week).
Pat shrimp dry, mix with salt, smoked paprika, garlic powder, onion powder, and cumin. Heat olive oil in large skillet on medium-high; cook shrimp 1-2 minutes per side until opaque.
Toss romaine with croutons, Parmesan shavings, and dressing. Plate salad and top with warm shrimp.
