  • 150g Sweet Potato Noodles (Dangmyeon)
  • 200g Lean Ground Beef (or thinly sliced steak)
  • 200g Fresh Spinach
  • 1 Carrot, julienned (matchsticks)
  • 4 Mushrooms (Shiitake or button), sliced
  • 4 tbsp Soy sauce
  • 1 tbsp Sugar (or maple syrup)
  • 1 tbsp Sesame oil
  • 1 clove garlic (minced)
  • Sesame seeds for topping

Instructions

  1. **Noodles:** Boil noodles according to package (usually 6-7 mins). Rinse under cold water and cut them with scissors so they aren't too long.

  2. **Protein:** While water boils, stir-fry the beef in a large wok/pan until browned. Add garlic, carrots, and mushrooms. Cook for 2-3 mins.

  3. **Wilt:** Add the spinach to the pan and cook for 1 min until wilted.

  4. **Combine:** Add the cooked noodles and the sauce mixture to the pan. Toss everything on high heat for 2 minutes so noodles absorb the sauce. Top with sesame seeds.
