- 150 g Sweet Potato Noodles (Dangmyeon)
- 200 g Lean Ground Beef (or thinly sliced steak)
- 200 g Fresh Spinach
- 1 Carrot (julienned; matchsticks)
- 4 Mushrooms (Shiitake or button) (sliced)
- 4 tbsp Soy sauce
- 1 tbsp Sugar (or maple syrup)
- 1 tbsp Sesame oil
- 1 pc garlic (minced)
- Sesame seeds for topping
Instructions
**Noodles:** Boil noodles according to package (usually 6-7 mins). Rinse under cold water and cut them with scissors so they aren't too long.
**Protein:** While water boils, stir-fry the beef in a large wok/pan until browned. Add garlic, carrots, and mushrooms. Cook for 2-3 mins.
**Wilt:** Add the spinach to the pan and cook for 1 min until wilted.
**Combine:** Add the cooked noodles and the sauce mixture to the pan. Toss everything on high heat for 2 minutes so noodles absorb the sauce. Top with sesame seeds.
