This vibrant summer salad celebrates peak peach season by combining juicy fruit with savory elements. The recipe balances sweetness with tangy vinaigrette, creamy cheese, nutty almonds, and fresh greens - a combination that is irresistibly fresh and a family favorite throughout summer months.

  • 25g sliced almonds
  • 170-220g mixed greens (butter lettuce blend)
  • 3 small (or 2 large) ripe peaches
  • 1 handful red onion slices
  • 80g canned corn, drained
  • 60g soft goat cheese, crumbled
  • 1 1/2 tbsp balsamic vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup
  • 1/4 tsp kosher salt
  • Fresh ground black pepper
  • 60ml olive oil

Instructions

  1. Toast almonds in a dry skillet over medium heat, stirring frequently, until fragrant and golden (4-5 minutes). Transfer to a plate immediately.

  2. Slice the peaches and thinly slice the red onion.

  3. Whisk together balsamic vinegar, Dijon mustard, maple syrup, kosher salt, and black pepper until thick and emulsified. Add olive oil.

  4. Top greens with peaches, almonds, red onion, goat cheese, and corn. Drizzle with dressing and serve immediately.
