Lemon Garlic Shrimp Pasta

This dish is perfect for occasions requiring an impressive presentation with minimal effort, accomplishable in about 30 minutes or less.

  • 454g large shrimp (21/25 count)
  • 1/2 tsp baking soda
  • 1/4 tsp crushed hot red pepper flakes
  • 1/4 tsp black pepper
  • 1/2 tsp Diamond Crystal Kosher salt
  • 227g spaghetti
  • 60g extra virgin olive oil
  • 6 cloves garlic, sliced
  • 480ml reserved pasta water
  • 56g unsalted butter
  • 1 large lemon, zested and juiced
  • 20g minced flat-leaf Italian parsley
  • Salt and pepper to taste

Instructions

  1. Combine shrimp with baking soda, red pepper flakes, black pepper, and salt in a bowl. Mix well and let sit 10 minutes.

  2. Bring salted water to boil and cook spaghetti one minute less than al dente. Reserve at least 240ml pasta water.

  3. Heat olive oil in large pan over medium heat. Add shrimp and saute approximately 3 minutes until firm and pink. Transfer to a plate and tent with foil.

  4. Add sliced garlic to the same pan and saute 2-3 minutes until lightly golden. Add more oil if needed.

  5. Add 120ml pasta water to pan, scraping up flavorful bits with a spoon.

  6. Add butter and the nearly-cooked pasta. Toss for 1 minute to coat well.

  7. Add shrimp, parsley, lemon juice, and zest. Mix thoroughly.

  8. Turn off heat. Taste and adjust seasonings. Add more pasta water if needed. Serve immediately.
