Japchae is a beloved Korean dish using sweet potato glass noodles, offering a sweet and savory flavor experience. The dish combines chewy glass noodles with colorful vegetables and tender beef in a sesame-soy sauce.

  • 900g beef
  • 450g sweet potato noodles
  • 3 medium carrots
  • 1 white onion
  • 1/2 bunch green onions
  • 6 garlic cloves
  • 225g spinach
  • 4 tbsp sesame oil
  • 1 tbsp olive oil
  • 6 tbsp soy sauce
  • 3 tbsp brown sugar

Instructions

  1. Prepare ingredients and sauce components.

  2. Boil water with oil; cook noodles 5-6 minutes, then drain.

  3. Heat skillet; brown beef and season with half the soy sauce, sesame oil, and brown sugar.

  4. Place noodles in bowl and top with cooked beef.

  5. Saute diced onion and carrot strips in oiled skillet.

  6. Add remaining sauce ingredients, minced garlic, and green onions; cook until soft.

  7. Add spinach and immediately turn off heat.

  8. Combine vegetables with noodles and toss together.

  9. Serve warm (reheats well).
