Green Shakshuka with Feta

By admin 2/28/2026

A green vitamin-bomb variation of the classic tomato shakshuka. This Middle Eastern-inspired dish swaps the traditional tomato base for nutrient-rich spinach.

Ingredients

Scale:
Units:
  • 1 Onion, diced
  • 1 Green Bell Pepper, diced
  • 2 cloves Garlic, minced
  • 1 tsp Cumin
  • 300g Frozen Spinach (thawed and excess water squeezed out) OR 400g Fresh Spinach
  • 4-6 Eggs
  • 100g Feta cheese
  • Fresh Cilantro or Dill (optional)
  • Olive oil
  • Salt and pepper
  • Crusty bread (for serving)

Instructions

  1. **Base:** Sauté onion and green pepper in olive oil until soft (5 mins). Add garlic and cumin, cook 1 min.

  2. **Greens:** Add the spinach. (If using fresh, add in batches until wilted). Season with salt and pepper.

  3. **Eggs:** Use a spoon to make little "wells" in the green mixture. Crack an egg into each well.

  4. **Steam:** Sprinkle feta over the top. Cover the pan with a lid. Cook on low-medium for 5-7 minutes until egg whites are set but yolks are still runny.

  5. **Serve:** Eat immediately with crusty bread for dipping.
