Green Shakshuka with Feta
A green vitamin-bomb variation of the classic tomato shakshuka. This Middle Eastern-inspired dish swaps the traditional tomato base for nutrient-rich spinach.

- 1 Onion, diced
- 1 Green Bell Pepper, diced
- 2 cloves Garlic, minced
- 1 tsp Cumin
- 300g Frozen Spinach (thawed and excess water squeezed out) OR 400g Fresh Spinach
- 4-6 Eggs
- 100g Feta cheese
- Fresh Cilantro or Dill (optional)
- Olive oil
- Salt and pepper
- Crusty bread (for serving)
Instructions
**Base:** Sauté onion and green pepper in olive oil until soft (5 mins). Add garlic and cumin, cook 1 min.
**Greens:** Add the spinach. (If using fresh, add in batches until wilted). Season with salt and pepper.
**Eggs:** Use a spoon to make little "wells" in the green mixture. Crack an egg into each well.
**Steam:** Sprinkle feta over the top. Cover the pan with a lid. Cook on low-medium for 5-7 minutes until egg whites are set but yolks are still runny.
**Serve:** Eat immediately with crusty bread for dipping.
