This salad stars the juicy citrus fruit with toasted almonds, feta cheese, and a zingy poppy seed dressing. It works across seasons and can become a main dish by adding protein like grilled chicken or salmon.

  • 2 pink grapefruit
  • 1 pc handful red onion slices
  • 220 g mixed greens or butter lettuce
  • 30 g feta or goat cheese crumbles (optional)
  • 25 g almonds (sliced)
  • 30 g granulated sugar (or honey)
  • 2 tbsp white vinegar
  • ½ tsp dry mustard powder
  • 0.13 tsp onion powder
  • 0.13 tsp kosher salt
  • 60 ml grapeseed oil (or neutral oil)
  • tsp poppy seeds

Instructions

  1. Peel and segment the grapefruit; thinly slice the red onion.

  2. Toast almonds in a dry skillet over medium heat, stirring occasionally, until fragrant and golden (4-5 minutes). Transfer to a plate immediately.

  3. Whisk together sugar, vinegar, mustard, onion powder, and salt. Gradually whisk in oil until creamy, then add poppy seeds.

  4. Place greens on plates and top with grapefruit, onions, cheese, and almonds. Drizzle with dressing and serve.
