Burrata Salad
This recipe celebrates simplicity and quality ingredients. The authors discovered burrata during a trip to Italy's Amalfi Coast, staying in Montepertuso near Positano. On their last night they went to a small, family-owned white table cloth restaurant and remember only one thing: the burrata. Burrata is a pouch of mozzarella filled with cream and fresh cheese. The dish serves 4 as a small appetizer and takes just 5 minutes to prepare.

- 90g baby arugula leaves
- 150g cherry tomatoes
- 1 large burrata cheese
- Olive oil
- White wine vinegar
- Kosher salt
Instructions
Wash and de-stem 90g baby arugula. Cut the cherry tomatoes in half.
Place a bed of arugula on a plate, then place the burrata in the center.
Drizzle with olive oil and a splash of white wine vinegar. Sprinkle with kosher salt and serve.
