Apple Slaw

This recipe transforms ordinary cabbage into something extraordinary by pairing it with sweet-tart apples and a creamy poppy seed dressing. Traditional coleslaw can feel flat, but adding apples brings natural sweetness and layered flavor. The dish works year-round but feels particularly suited to fall gatherings and summer picnics alike.

  • 280 g green cabbage (shredded)
  • 70 g red cabbage (shredded)
  • 2 tart apples (thinly sliced)
  • 110 g carrots (2 medium) (shredded)
  • 2 green onions (thinly sliced)
  • ½ tsp kosher salt, divided
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 30 g granulated sugar (or honey)
  • 120 ml mayonnaise
  • 1 tbsp poppy seeds

Instructions

  1. Shred cabbage, slice apples thinly, shred carrots, and slice green onions. Combine in a large bowl with 1/4 teaspoon salt and stir.

  2. In a medium bowl, whisk apple cider vinegar, Dijon mustard, sugar, mayonnaise, poppy seeds, and 1/4 teaspoon salt until smooth. Pour dressing over vegetables and mix. Refrigerate up to 4 days.
