Apple Slaw
This recipe transforms ordinary cabbage into something extraordinary by pairing it with sweet-tart apples and a creamy poppy seed dressing. Traditional coleslaw can feel flat, but adding apples brings natural sweetness and layered flavor. The dish works year-round but feels particularly suited to fall gatherings and summer picnics alike.

- 280g shredded green cabbage
- 70g shredded red cabbage
- 2 tart apples, thinly sliced
- 110g shredded carrots (2 medium)
- 2 green onions, thinly sliced
- 1/2 tsp kosher salt, divided
- 2 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 30g granulated sugar (or honey)
- 120ml mayonnaise
- 1 tbsp poppy seeds
Instructions
Shred cabbage, slice apples thinly, shred carrots, and slice green onions. Combine in a large bowl with 1/4 teaspoon salt and stir.
In a medium bowl, whisk apple cider vinegar, Dijon mustard, sugar, mayonnaise, poppy seeds, and 1/4 teaspoon salt until smooth. Pour dressing over vegetables and mix. Refrigerate up to 4 days.
