Apple Salad
This salad emphasizes sweet tart apples, pecans, feta, and a zingy maple vinaigrette for the perfect side dish. Pink Lady apples are recommended for their sweet-tart flavor and crisp crunch. The recipe works well for both casual weeknight meals and formal entertaining, particularly during fall and winter seasons.
Ingredients
- 1 crisp tart apple (like Pink Lady)
- 220 g mixed greens or tender lettuces
- 30 g candied pecans (or toasted pecans)
- 30 g feta or goat cheese crumbles
- 40 g pomegranate seeds or dried cranberries
- fresh thyme (chopped; optional; for garnish)
- 2 tbsp maple syrup
- 2 tbsp apple cider or white wine vinegar
- 1 tbsp Dijon mustard
- ¼ tsp kosher salt
- 90 ml olive oil
- Fresh ground black pepper (optional)
Instructions
Prepare candied pecans in advance if using homemade versions.
Make the dressing by whisking maple syrup, vinegar, Dijon mustard, salt, and black pepper in a medium bowl. Whisk in olive oil one tablespoon at a time until creamy.
Thinly slice the apple.
Arrange greens on a platter or individual plates. Top with apple slices, candied pecans, cheese crumbles, and pomegranate seeds. Add approximately 6 tablespoons dressing and serve immediately.
